Usually my days are pretty well managed and organized - their is a plan in place and we stick to it (as best you can with a 4 and a 1 year old). Today just started out rough with Jessie getting her 15 month shots. That 1 year old officially knows and remembers who the doc is and is not happy about seeing him. After leaving a PACKED doctors office we headed off to get Jack and I'm pretty sure they gave him coffee at school today.
Although it was a hectic day, I was able to get all the Spring/Summer clothes off to the consignment shop down the way. I use Kangaroo Pouch on Guess Rd. http://www.thekangaroopouch.com/. I have been pretty happy and am pleased to get a bit of gas money each month.
So on days like today, it's nice to have a handy recipe that is easy to throw together. Here's a keeper for the recipe box - especially if you have kiddos, mine eat this stuff up!
Chicken Fried Rice
3-4 cups of cooked COLD white rice
1 cup of steamed broccoli or peas or any veggie for that matter
2 eggs (pancake style)
1/2 chopped onion
2 large chicken breast or 3-4 chicken thighs (depends if you like the dark or the white)
I usually start by cooking the chicken and onion in a bit of vegetable oil till no longer pink and onions are translucent.
In a separate pan, I add scrambled eggs and let cook thoroughly on one side and then flip to cook on the other side. Remove and cut into small strips.
In a larger frying pan combine your cold rice, broccoli, onion, and chicken. Dash with as much soy sauce as you like and cook till heated through. Add your cooked egg at the finish and voila! Kids love it, it's healthy and low fat to boot.
